About Killik Hot Sauce Co.

Four years ago, Michael Killik and his father suffered heart attacks the same year. Michael survived; his father did not. After his doctor told him to avoid sodium, he was disappointed to learn that the leading brands of his favorite food – hot sauce – were now off-limits.

Rather than accept defeat, Michael developed a recipe for a low-sodium hot sauce option. His secret for flavor? Fermentation.

In April of 2019, Michael founded Killik Hot Sauce Company. To meet the demands of our customers, we scaled up quickly.

After upscaling production from five one-gallon pickle buckets to nine 55-gallon drums. After chopping hundreds of pounds of onions and chilies, we need to blend the ingredients With our association with Cleveland Central Kitchen, have access to lots of high-powered blenders to handle our production size. We also have a foot-pedal bottling machine and labeling machine that puts on 400 labels an hour. Since almost everything is done by hand, we hired six part-time employees.

In order to pay for our growth, we took on some high-interest credit card debt. We’re coming to Honeycomb investors to help us refinance that debt and free up our cash flow as we expand.

We are on track in 40 stores by the end of the year. Next year our major goal is to be in or dealing with a couple big box stores or distributors (we are currently in negotiations with Sysco, a national distributor). The challenge is that there are thousands of hot sauce brands, but since ours is fermented, we stand out from most of the rest.

The Project

We intend to refinance the high interest credit card we incurred during the startup and early expansion phase. Refinancing will result in lowered monthly payments and improved cash flow.

By refinancing our current debt we will be able to redirect more capital into the production of the hot sauce.

We expect to become profitable beginning in March 2020, or at the start of our first major season. We will be promoting our business through local networks and farmer's markets until we can afford to expand from small batch to exponentially larger batches. During 2021, we plan to expand as a large-scale business that employs a Chef, production staff, sales staff, and delivery staff to bring our hot sauce to the world.

About the Owner

Killik Hot Sauce Company is owned and operated by Michael Killik: veteran, father of four daughters, and stroke and heart attack survivor. In his previous life he taught middle school science, which is what gave him the passion of the scientific process of fermentation. After his stroke 15 years ago, he had to make a career change into restaurant management, where his passion for food blended with his passion for science.

The last straw, per say, was when he had a heart attack in the same week as his father. His father did not survive. After having survived the heart attack, Michael decided that he had to change his way of life but LOVED hot sauce. He researched that hot sauces have sometimes very high sodium levels and that this could have been a contributing factor to his heart attack. Having been dabbling in his own hot sauce making, he found that what he was creating was better tasting, better looking, and MUCH healthier for you. With the belief that he was doing better for people struggling with their diet like he was, he started Killik Hot Sauce Company. The rest is history!
